How a recipe intended for inmates of Bentham's proposed panopticon prison is making its way onto a modern restaurant menu.

In the millions of words left in handwritten notes by 18th C philosopher Jeremy Bentham UCL's Transcribebentham project volunteers noticed a collection of recipes intended for the panopticon prison. St John Smithfield cooked one for Radio 4's PM programme and now it's being "fast-tracked" onto the menu.
