Double Irish Cream Liqueur Now we come to the Double Irish Cream Liqueur from Two Stacks that I promise you is unlike any Irish Cream that you’ve ever tasted.
When people taste this, they do all sorts of things. Their eyes light up, their shoulders go back, and their feet start tapping. They utter words from their mouth that they wouldn't normally say in polite company. We’ve heard it all as this is a special drop.
But what sets this apart? So what makes it so special? It's all about the ingredients, and as always again, it's about transparency.
Let’s get back to basics on Irish Cream Liqueur and talk about something that everyone should know.
On the back label here, right down in the bottom left corner you’ve got a blue and yellow logo. This is the European Union GI or Geographical Indication logo and this means that Irish Cream Liqueur is a protected product.
You will see this same logo on dozens, if not, hundreds of other food products that are made in Europe and what it essentially means is that the production methods of products like this are protected and defined in a rule book, so to speak. We call that rule book the Technical File.
The Technical File for Irish Cream Liqueur states that “The alcohol content of the drink must contain a minimum of 1% of Irish Whiskey” and this has become the market standard since Irish Cream Liqueur was initially created in 1974.
That’s 1% Irish whiskey and the rest of the alcohol being ethyl alcohol of agricultural origin or Grain Spirit as we call it.
What sets this Irish Cream Liqueur from Two Stacks apart is that we use 8 times more Irish whiskey than the legally required minimum or market standard. So just under half of the alcohol in this bottle is whiskey AND the whiskey that we use is The First Cut Signature Blend, that we talked about previously. And that whiskey brings a depth of flavor as it’s a blend of 4 different styles of whiskey
Now to the Double Cream which is co-op sourced in the Golden Vale area of Munster, which is considered Ireland’s Dairy Heartland.The double cream itself that’s used is 12% fat.
We add tiny quantities of natural flavors - vanilla and chocolate - and caramel as a natural color, along with an emulsifier and a stabilizer and that’s pretty much it!
Now I remember growing up in Ireland in the 1980s and this is what Irish Whiskey Cream Liqueur tasted like back in the day when we would raid Mom and Dad's drink cabinet, on a Saturday night. This is the Irish whiskey cream liqueur that I remember supping on when I was way too young.
We’ve gone back to our Irish Cream Liqueur roots with this product from Two Stacks and we’re making sure that it once again lives on the top shelf in both stores and bars.
So think of using this not just as a beverage. Think of using this also in pastry and dessert both at home and also in restaurants. Add this to a serving of locally made vanilla ice cream, or drizzle it atop some Bread & Butter Pudding.
One of the things we do at home, when we want to give it a little bit of a perk, is that we will add a measure of the The First Cut Signature Blend and a measure of the Double Irish Cream together in a glass, and this perks up the Double Irish Cream and amplifies the flavors as we use the same whiskey that goes into the Cream Liqueur itself
Shelf life is 18 months from date of manufacture and 6 months once opened, and I recommended putting this in the fridge after you’ve cracked it open.
