Recipe: sweat off two onions & one rib of celery in butter & a little oil. When translucent & golden, add two cans chopped tomatoes, 2 glasses white wine, and a little sugar. Season and add oregano. Simmer 1 hr. Add any seafood you want - prawns, squid, clams, lightly cooked fish chunks - and simmer for another 5-7 min. Serve with toasted sourdough.
