Stoempdog: Fast slow food in Brussels

Stoemp is one of the great comfort foods: creamy buttery mashed potatoes mixed with an endless array of vegetables and served most often with sausage. It is now evolving as chefs are inspired to upgrade and create on the basic theme. Albert Verdeyen the self-proclaimed King of Stoemp has three cookbooks to his credit with 172 different stoemprecipes. Now he and restaurateur Cédric Gerard have opened Stoempdog, a restaurant in the Halles Saint-Géry. Their gimmick: serving the stoemp with its sausage in a specially created hotdog bun.
