We catch up with chef and cookbook author, Silla Bjerrum as she takes over the kitchen at Charlottes W5, serving food from her latest cookbook. After mastering sushi, where to cut is to cook, Silla has turned to robata - meaning 'fireside cooking' where meat, fish and seasonal vegetables are traditionally skewered and grilled over binchotan coals which reach temperatures of 600 degrees. The pure heat creates sensational flavours which she pairs with fresh salads, sides, desserts and drinks. Just as she did at the sushi bar, Grill GRRRL Silla redresses the gender imbalance as she sizzles at the barbecue.
