A taste of Mexican fermentation with Umani

Umani was founded in Mexico City by Ixchel, Jorja and Juan-Carlos. We spoke with the girls behind this fermentation collaboration, who are curious about past traditional techniques, as well as using local Mexican ingredients to flavour their various products.
