Efrem Leigh: How to Skip the Ships Cook Assessment | Get the Fork Out Ep. 25

The yacht chef community grumbles whenever we hear about the Ships Cook Certification or SCC.  Chefs that have been in the industry prior to it's implementation will grumble even more.  It's a strange culinary test that many even take a prep course for, conveniently offered on the same premises.  The course and the test cover some classic French and British recipes and techniques.  Thats a strange coupling of cuisines for a very international industry but so be it.  What's important to me is the fact this has been built into the MLC for the specific purpose of making sure that whoever is cooking for crew on commercial ships has the wherewith-all to provide healthy meals while keeping in mind religious sensitivities of, again, an international crew.  

This is obviously very important criteria and I think the initial thought behind it was a brilliant and noble one.  The part I have a problem with is the cowboy implementation of these criteria via the SCC and the blatant profiteering and misinformation surrounding it.  

This is to the detriment of new crew to the industry straight out of restaurants trying to get into an industry that already has high entry fees (STCW) that unbeknown to them, they can easily get a certificate sent to them after they've provided their flag state with sufficient evidence of training and experience.  Green chefs can't push back at all and assume that in order to get into a galley they need to be assessed.  It's ironic that this doesn't happen in the restaurant industry on land, when you're hiring someone you're meant to know how to read a resume and chase down references.

Efrem and I try to clarify all of this information in one place so anyone can use it as a resource, chefs coming into the industry or chefs changing boats and flag states, to captains and management companies knowing exactly what is needed when hiring a chef.
